How do restaurants like Chipotle and Qdoba keep the meats moist in their bain maries? Is it in liquid?
I want to be able to keep meats warm and moist in my catering business, but without a loss of flavor. Any help would be really appreciated!!
Meats are kept in a sufficient amount of liquid in the steam tables to keep them to temperature. If you notice some caterers just use a hot lamp to keep their meats hot. Moistness is more akin to how the meat was cooked as opposed to the method it is
